Thankfully, the path to wine at home was only a short descent, namely into the house's own cellar: My parents were and are wine lovers, and so the craft room was filled with Italian and French wines after every vacation. The biggest obstacle to the wine boxes were disparately distributed tools and fantastic tools, which with a little good will and the unerring instinct of a thirsty phylloxera were easy to jump over ... Since my work trips in 1995, which led me mainly to France, accompanied me the curiosity for good wine and good conversations with winemakers. I was particularly taken with Burgundy, for me still an easy entry into the world of wine: Although there are now over 100 different designations of origin (AOCs or AOPs), but between the villages are usually only a few meters, one tastes the current vintage, knows about the slightly different soil conditions, the winemakers vinify similarly, but: The constant are the two, three grape varieties and the wines pressed from them pure.
No difficult to understand cuvées, so much learning potential for beginners. So it went for years, with some trips to Italy and Spain enriching my personal wine portfolio.I often worked at harvests, in the field, in the cellar. I tasted dozens and dozens of wines, mostly from the barrel, including some of the most prestigious Grands Crus from Burgundy. But as time went on, I kept asking myself the question: How and where to go from here? Was this it now? I was on the lookout. And then came the key experience. Munich 2011, Schwabing, the restaurant Belleville - which a few years later received the award for the best bistro in Germany - was looking for an affine temp. After a short tour with Wolfgang through the restaurant and the in-house wine warehouse, he noted with an almost apologetic undertone that they served only natural wines. Somewhat taken aback, I asked him... "Organic wines, right?""No, that's something else..." After the first, okay, honestly after the second sip I knew: This is what I was looking for. Thank you Wolfgang, that you have opened the door for me! The path behind it I walk since then with wonderful branches and often accompanied by natural winegrowers in different regions of France. And I don't regret a single step of it: learning while walking or tasting. I consider myself lucky to be able to give you, as my customers, some sparkling pearls of this path to enrich your culinary experiences in friendly company with a really good wine!
